I seriously do not “cook”. I want Tasty Tuesdays to be all about how to eat clean, how to make VERY simple meals, while at the same time feeling satisfied. This weeks “Keep It Simple” meal is FAJITAS! 1 chicken breast 1/4 green bell pepper 1/4 red bell pepper 1/4 yellow onion Half a packet of McCormick’s Fajita mix A 5sec spray of olive oil 3 small whole wheat tortillas Total of 500 Calories This took 5min to prep and 10min to cook. I cut up the chicken breast, and tossed it in the pan after spraying the pan with olive oil. Tossed in the chopped up bell peppers. Tossed in the chopped up onion. Mixed in the fajita seasoning. SXSW = Stress!

There is so much to do at SXSW I am not sure how to keep track of all my meetings, events, parties, programs, speaking engagements, and everything else.   I think the stress level that is introduced due to the number of things that I know need to be done before I leave on Wednesday is crazy.

The problem is that SXSW is only 5-days or so.   If you could take the energy and connections and networking that happens at SXSW every year and somehow have it be an ongoing thing it would reduce the stress exponentially.  I think some of this has to do with planning, but I was talking with Ted Rubin last night and he said that he has run into the same problems in the past and the only way to make this work is to keep things fluid.

Next year I have to do that.  But in the meantime I need to find a way to make sure I am following up on everything and connecting with people I need to connect with and also making sure I keep track of what I have to do as follow-up.

But that is life, SXSW Life at least!

Here are a few of my holiday tips to help you have a better relationship with food (and your body) when you may feel a bit overwhelmed or anxious around so many "occasional" eats:    1) Thank your body 2) Plan for a workout on the day after the meal (how about my 1 hour  Trainer workout  on Triathlete Magazine online?) 3) Yum when you eat 4) Don't lecture others about what they are eating 5) If someone lectures you about what you shouldn't eat, start yumming 6) Find a recipe that intimidates you and go for it! Hi Everyone, The winter is here and my Brighton my home resort is finally open. It's already been a great pre-season where we have started to get a natural base of snow in the mountains. I have been ski-touring around my favorite mountains before they opened up, but I am happy now I can take the chair again. But if you are looking for a great work-out. Try ski-touring and you will be sure to get the best snow that no one can get to.
